Standard sunflower oil is roughly 20–30% oleic acid and high in polyunsaturated fats that break down under heat. High-oleic varieties reach 80–92% oleic acid, giving much better oxidative stability and shelf life.

Refined sunflower oil is the standard commodity grade — cheaper, fine for retail and general cooking. High-oleic is a speciality grade for heat-intensive industrial use. Crude sunflower oil is the unrefined input bought by refineries.
